Homemade Larabars

2GO_LARABARSAfter years of buying larabars I wanted to try making them myself.  This recipe is easy if you have a large food processor.  I used our mini one and had to mix it a bit by hand. Making your own energy bars is a great way to save money and savor something “healthy” sweet in the afternoons.

After years of buying larabars I wanted to try making them myself. This recipe is easy if you have a large food processor. I used our mini one and had to mix it a bit by hand. Making your own energy bars is a great way to save money and savor something “healthy” sweet in the afternoons.
Ingredients
  • 1 cup roasted almonds
  • 3/4 cup dried apricots
  • 1/4 cup currants
  • 1/4 cup chia seeds
  • 1 1/4 cup dates, pitted, rehydrate in water for a day if they are dry
  • 1 tsp vanilla extract
  • parchment paper
  • food processor
Instructions
  1. Grind up the almonds first.
  2. Then add the dried fruit, dates and vanilla extract.
  3. Fold in the chia seeds with your hands or a spoon.
  4. Line a pan with parchment paper and spoon your gooey mixture on top.
  5. Lay another piece of parchment paper on top. Use to flatten the mixture into desired thickness.
  6. Pop in the fridge and eat all week long!
  7. * For raw bars use raw almonds.
