After years of buying larabars I wanted to try making them myself. This recipe is easy if you have a large food processor. I used our mini one and had to mix it a bit by hand. Making your own energy bars is a great way to save money and savor something “healthy” sweet in the afternoons.
Ingredients
- 1 cup roasted almonds
- 3/4 cup dried apricots
- 1/4 cup currants
- 1/4 cup chia seeds
- 1 1/4 cup dates, pitted, rehydrate in water for a day if they are dry
- 1 tsp vanilla extract
- parchment paper
- food processor
Instructions
- Grind up the almonds first.
- Then add the dried fruit, dates and vanilla extract.
- Fold in the chia seeds with your hands or a spoon.
- Line a pan with parchment paper and spoon your gooey mixture on top.
- Lay another piece of parchment paper on top. Use to flatten the mixture into desired thickness.
- Pop in the fridge and eat all week long!
- * For raw bars use raw almonds.
