Lazy Gazpacho

TDH and I met an awesome couple from Newport Beach while we were honeymooning in Fiji.  We kept in touch via facebook and get together for breakfast, lunch or dinner.  Recently we started sharing recipes, last week it was a family Gazpacho.  The recipe they sent looks amazing but the instructions are a page long and I started cooking at 7:45pm.  I tweaked the recipe a bit and cut the steps down to two, plus you can make everything in a Vita Mix.  Easy prep AND easy clean up, yes please!

Lazy Gazpacho

To Buy or Grow (we love growing our own food over here at Bird Rock Ranch)

2 medium tomatoes, or 1 large tomato, peeled, left raw

1 cucumber, quartered

1 garlic clove

3 green onions, coarsely chopped, white & green parts

1 tsp rice wine or red wine vinegar

1 tsp Worcestershire sauce (omit for vegan diets)

2 tbsp extra virgin olive oil

small bunch parsley

dash of salt & pepper

Optional:

avocado, chopped

Greek yogurt

fresh bread

 

To Do

1.  Throw all ingredients in the Vita Mix.

2.  Blend until the Gazpacho is the consistency you prefer.  (Chunky – blend less.  Smooth – blend more.)

Top with the optional ingredients or eat as is.  I paired mine with a piece of toast from the local bakery with Earth Balance spread.
